In most interviews you will have a hiring manager and human resources or recruiting person.  By hiring manager, I mean the person who would be your immediate boss or two levels up.  Occasionally companies will also bring a someone who is currently in the position.  Regardless of the makeup of the interviewing team, you will have a knowledgeable people in the interview who can answer specific questions about the job and nature of the work.  The companies know you want to know as much about the job as possible and they also want to market the opportunity and company to you, so you will find that they have a vested interest in having a knowledgable team present to answer your questions.
